In this practical course the student will as part of a team of the service brigade perform the role of host and server in a working dining room setting. Students will develop food & beverage service techniques teamwork and organization skills and customer service skills. Further students will positively impact guests' dining experience through their product knowledge and up-selling skills. Finally students will master the timely flow and routine of a meal period while interacting with the back-of- the house culinary team.
